Breakfast Casserole


For a 9x13 pan:

Ingredients:


9 eggs

1/2 cup whole milk

1 cup cottage cheese

1 cup shredded cheddar or Colby jack cheese

1/2 cup shredded cheese for topping

1 teaspoon salt

1/2 teaspoon pepper

1 cup cooked, bacon to sausage

4 cups frozen shredded hashbrowns (this can be swapped with 3 cups diced sweet potatoes!)


Optional add-ins:

2 sliced green onions, 1 cup of chopped spinach, 1 cup chopped mushrooms


Method:


Heat the oven to 350 degrees. Butter a 9x13 baking dish.

Whisk together the eggs, cottage cheese, milk and salt and pepper. Add the potatoes, cooked meat, shredded cheese and optional add ins. Mix well and dump into the baking dish. Sprinkle over a little more cheese. Bake for about 45 minutes or until it isn’t jiggly anymore!
