Makes 2 loaves.
Ingredients:
4 medium ripe bananas
3/4 cup softened butter
1 teaspoon baking soda
1 teaspoon salt
1/4 cup maple syrup
1 cup caster sugar
3 eggs
1 teaspoon vanilla
3 cups flour
1 cup chopped walnuts
1 cup semi sweet chocolate chips
Method:
Heat the oven to 350 degrees. Line the bottom of each bread pan with parchment, then coat all sides with plenty of butter. Combine the sugar and butter in a mixer with the paddle attachment. Add bananas and mix until smooth. Add baking soda, salt, syrup, eggs and vanilla. Mix again. Add flour and mix until just barely combined. Add walnuts and chocolate chips and mix until just combined. Pour half the batter into each pan. Bake for 45-50 minutes, or until a toothpick comes out nearly clean. Cool slightly and eat with plenty of butter. Enjoy!
