Ingredients:
2 cups shredded zucchini, about 1 medium zucchini
2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup cocoa powder
1 cup sugar
3/4 cup sour cream
1/2 cup whole milk
1/4 cup oil
1 teaspoon vanilla
2 eggs
Frosting:
8 tablespoons melted butter
2 heaping tablespoons cocoa powder
1/4 cup whole milk
2 cups powdered sugar
1 teaspoon vanilla
Heat the oven to 350 degrees. Combine the dry ingredients in a large bowl. Add the sugar and whisk. Combine the wet ingredients in another bowl. Pour them into the dry ingredients and mix. Add the shredded zucchini and combine. Pour the batter into a greased 9x13 pan and bake for 30 minutes. Make the frosting while the cake cooks. Pour the frosting over the cake as soon as it is out of the oven.
