Makes 24 rolls, filling one sheet pan or two 9x13 pans.
Ingredients:
1 cup warm milk
6 tablespoons melted butter
1/4 cup warm water
4 teaspoons yeast
1/2 cup brown sugar
2 teaspoons salt
2 eggs
3/4 cup pineapple juice
5-6 cups flour
Method:
Heat the milk and butter together in a microwave safe bowl until warm and the butter is mostly melted. Let it sit until it is cool enough to touch so that it doesn't kill the yeast.
Add the yeast to the bowl of a mixer. Pour in the warm water. Let this sit until it begins to smell yeasty and starts to puff up, just a few minutes.
Add the remaining ingredients to the mixing bowl except for the milk/butter mixture and the flour. Using a dough hook and with the mixer on low add the flour one cup at a time until 5 cups have been added. Pour in the milk and butter. Let the mixer go for a minute or two until the flour has been absorbed.
If the dough seems too sticky add 1/4 cup of flour at a time until it is just tacky. You don't want it too dry, so make sure the flour is incorporated each time and check the texture before adding more. Once enough flour has been added let the dough mix on medium low speed for 5 minutes.
Place the dough in a large bowl that has been coated lightly with oil. Cover with plastic wrap or a lid and let it rise until it has doubled in size. This took my dough about 1 hour.
Dump the dough onto a floured surface and separate into 24 equal portions. I like to roll my dough into a ball, cut it in half (making two sections), then in half again (making four sections). Then each section in half one more time (making 8 sections). Then I take each of those sections and divide them into three (making 24 rolls).
Roll each piece into a ball and place it on a buttered pan with the seam side down. Brush each dough ball with an egg wash (1 egg whisked with about a tablespoon of water). Cover with a lid or plastic and let them rise until they are noticeably larger, the sides and touching and they look puffy. This took my dough about 1 hour.
Bake at 375 degrees for 15-18 minutes until they are golden brown and sound hallow when you tap them. Enjoy!
