Makes 4 dozen cookies.
Ingredients:
1 cup softened butter
1 cup sugar
1 cup brown sugar
1 teaspoon salt
1 teaspoon baking soda
4 teaspoons corn starch
1 teaspoon vanilla
2 eggs
2 1/2 cups flour
1 cup oats
1 1/2 cups semi sweet chocolate chips
Method:
Heat the oven to 350 degrees. In a large bowl cream together the butter and sugars. Add the eggs and mix until smooth. Add the baking soda, salt, vanilla and corn starch and mix until smooth. Add the flour and mix until just combined. Add the oats and chocolate chips and combine. Use a 1 tablespoon cookie scoop and place the dough on a parchment lined baking tray. I do 12 per tray. Bake for 9 minutes, then drop the tray onto the counter to flatter them. The cookies should look just barely brown on the edges and slightly under cooked in the center. They will set after a minute.
