Overnight Sourdough Pancakes


Makes about 20 large pancakes, 1/2 cup batter each.


Ingredients:


Before you go to bed, combine:

1 cup sourdough discard

2 cups flour

1 teaspoon salt

2 cups whole milk


In the morning, add:

1 teaspoon baking soda

3 large eggs or 4 medium eggs

2 tablespoons sugar

4 tablespoons melted butter


Method:


Heat a skillet over medium heat. Coat the pan with plenty of butter. I use a 1/2 cup measuring cup to make the pancakes. The pancakes will spread so give them a little room. Once the top is bubbly and the underside is golden, flip and cook for less than a minute on the other side. Serve with butter and syrup... a little cream is also fantastic.
