Makes 16 large breadsticks.
Ingredients:
2 cups warm water
1 tablespoon yeast
2 tablespoons sugar
2 teaspoons salt
2 tablespoons olive oil
4 1/2 - 5 cups flour
For the filling:
6 tablespoons softened butter
2 teaspoons Italian seasoning
Garlic salt to taste
3/4 cup Parmesan cheese
2 tablespoons of butter for the pan and brushing after baking
Method:
Add the yeast, water and sugar to the bowl of a mixer. Let it sit for a few minutes, until the yeast is frothy. Add the salt, olive oil and 4 cups of flour. Knead the dough at medium speed until combined. Add remaining flour 1/4 cup at a time until the dough is tacky and no longer sticks to the sides. Knead for 5 more minutes. Add the dough to an oiled bowl and cover. Let it rise until double in size.
Butter a baking sheet or two 9x13 pans. Roll out the dough into a long rectangle until about 1/4-1/3 inch thick. Spread the dough with the filling and sprinkle with the Parmesan. Fold in half hot dog style and slice into 16 strips. Roll into twist shapes and place them on the baking sheet. Leave a little room between for rising. Cover the pan and let the breadsticks rise 30-60 minutes.
Bake in a 350 degree oven for 20-25 minutes until slightly golden. Brush the tops with butter and enjoy!
