Ingredients:
2 cups warm water
1 cup milk
2 tablespoons yeast
1 tablespoon salt
1 tablespoon sugar
4 tablespoons soft butter
1 cup potato flakes
6 1/2 - 7 cups flour
*I use bread flour but AP is fine here!
Method:
Add the yeast, sugar and water to the bowl of a mixer. Let sit for a minute until the yeast begins to become frothy. Add the salt, potato flakes and butter and set the mixer to low speed with a dough hook attached while you add the flour. Add 6 1/2 cups total and let it fully combine. If the dough feels sticky add 1/4 cup more flour. Repeat if needed. Knead for 5 minutes. Cover and let the dough doubles in size. This takes about 1 hour.
Dump the dough onto a floured surface and separate into 24 equal sections. Roll each one into a ball, pinching the seams together on the bottom. Place onto a parchment lined baking sheet. Sprinkle the tops with a little more flour. Cover with a tea towel and let the rolls rise for 30-60 minutes, until nice and puffy.
Bake at 350 degrees for 20-25 minutes.
