Sheet Pan Cashew Chicken


Ingredients:


4 small chicken breasts

1 bunch of asperagus

1 cup unsalted cashews

2 tablespoons olive oil

3 tablespoons rice wine vinegar

5 tablespoons soy sauce

2 tablespoons brown sugar

1 teaspoon sesame oil

1 tablespoon miso paste

1 tablespoon sweet chili sauce

1 tablespoon sesame seeds

sliced green onions for garnish


2 cups uncooked rice

1 tablespoon butter

1/2 teaspoon salt


3 mini cucumbers

1/2 cup rice wine vinegar

Everything but the bagel seasoning


Method:

Start by heating the oven to 400 degrees. Dice 4 small chicken breasts. Add the to a sheet pan with a bunch of chopped asparagus and 1 cup of unsalted cashews. Pour over the sauce and toss. Bake for 30 minutes.


Cook the rice while the chicken cooks: add 2 cups of rinsed rice with 1 tablespoon butter, 1/2 teaspoon salt and 3 3/4 cup water to a medium pot. Bring to a boil, cover with a lid and reduce to a simmer for 18 minutes.
