Makes 6 large biscuits.
Ingredients:
2 cups flour (1/4 cup more if needed)
1/2 teaspoon baking soda
3/4 teaspoon baking powder
3/4 teaspoon salt
1 cup sourdough discard
1 cup whole milk
6 tablespoons cold butter
Heat the oven to 400 degrees. Whisk together the dry ingredients in a medium bowl. Add the butter use two knives or a pastry cutter and mix until the dough resembles peas and wet sand. Whisk together the milk and discard and add to the dry ingredients. Fold together until combined. Dump onto a well floured flat surface and press down evenly until 1/2 inch thick. Use a 2 inch round cutter to make 6 biscuits. Press the dough scraps together to get the last few. Place on a parchment lined baking sheet and cook for 15-20 minutes, until golden. Brush with honey butter and sprinkle with flaky salt.
For the gravy:
Brown 1 pound of sausage in a pan. Add 1 teaspoon of dried sage and stir. Add 1/4 cup flour and stir. Let it cook for 30 seconds. Add 2 cups of whole milk slowly while stirring. Cook until thickened. That’s it!
For the kale, remove the fibrous stem and slice into bite size pieces. Sauté over medium high heat with a bit of avocado oil and salt and pepper until crisp.
