Ingredients:
1 cup softened butter
3/4 cup brown sugar
1/2 cup white sugar
1/2 cup sourdough discard
1 egg
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
2 cups flour
3/4 cup oats
1 cup semi sweet chocolate chips
Method:
Heat the oven to 375 degrees. Add softened butter and sugars to the bowl of a mixer. Combine until smooth using a paddle attachment. Add baking soda, salt, egg, discard and vanilla. Mix until smooth. Scrape down the sides to make sure everything combines evenly. Add flour and mix until just barely combined. Add oats and chocolate chips and mix until just combined. Scoop cookies onto a parchment lined baking sheet. I did six per cookie sheet, using a 2 tablespoon scoop. Bake for 10-12 minutes until the top is just set. As soon as they come out of the oven drop the cookie sheet onto the counter to flatten them. While the cookies are still warm, use a large round metal biscuit or cookie cutter to shape them into perfect circles by keeping the cutter firm on the pan and quickly going around the cookie a few times. Cool on a cooling rack.
