Makes 4 personal pizzas.
Ingredients:
1/2 cup sourdough start, discard is okay but a fed start would be best
1/2 cup olive oil
2 teaspoons salt
1 tablespoon honey
2 cup warm water
5-6 cups bread flour
Method:
Add all ingredients to the bowl of a mixer with the dough hook attached. Mix on medium low speed for 5 minutes until everything has come together to form a smooth dough ball. The dough should be tacky but not wet or sticky. Start with 5 cups and add 1/4 cup more flour at a time if the dough is sticky. Pizza dough should be a bit stickier than bread dough. Add the dough to a bowl with a little olive oil in the bottom. Coat all sides of the bowl and dough with the oil. Cover with plastic wrap and let rise to double. This will take 6-8 hours, so I will usually make the dough early in the day to use for dinner.
