Ingredients:
2 cups flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
1 cup melted butter
1 cup warm water
2 teaspoons vanilla
2 eggs
1/2 cup whole milk+1 tablespoon vinegar
Butter for greasing the pan
For the tres leches sauce:
1 14 oz can sweetened condensed milk
1 12 oz can evaporated milk
1/2 cup cream
Whipped cream, peaches and strawberries for topping.
Method:
Heat your oven to 350 degrees. Butter an 11x15 cookie sheet with softened butter. Set aside. Melt the butter for the batter in a large bowl. Add all the remaining ingredients and mix until mostly smooth. Pour the batter into the greased pan and spread evenly. Bake for about 20 minutes. The cake should be just set, but not wobbly in the middle. The edges should just start pulling away. Remove from the oven and cool completely.
Make the sauce by whisking the three milks together in a pitcher. Poke lots of holes in the cake using a fork. Pour the sauce evenly over the top of the cake after it has cooled and spread evenly. It is a lot of liquid but the cake absorbs it all and it's delicious!
Make some whipped cream by whisking 2 cups of cream with an electric mixer until it is thick and fluffy. Don't over mix or it will turn to butter!
Top the cake with whipped cream, fresh fruit like raspberries, strawberries or peaches and enjoy!
This cake works great halved and baked in a quarter sheet pan for smaller groups.
