Walnut Chocolate Chip Banana Mini Muffins

Makes about 34 mini muffins.



Ingredients:


2 ripe bananas

2 eggs

1/2 cup softened butter

1/2 cup white sugar

1/4 cup brown sugar

1 teaspoon vanilla

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups flour

1/2 cup semi sweet chocolate chips

1/2 cup finely chopped walnuts


Method:


Heat the oven to 350 degrees. Coat a muffin tin in avocado oil. Mash bananas in a mixing bowl. Add butter and sugars and mix until smooth. Add eggs, baking soda, salt and vanilla and mix again. Add flour and stir until just barely combined. Add walnuts and chocolate chips and fold gently. Use a 1 tablespoon scoop to fill each muffin spot, about 3/4 full. Bake for 10-12 minutes or until a toothpick comes out clean. Let them sit in the muffin tin for a few minutes before removing. Enjoy with plenty of butter!
