Makes two loaves.
Ingredients:
3 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 tablespoon cinnamon
1/2 teaspoon nutmeg
1 cup brown sugar
1 1/4 cup white sugar
3 eggs
1/2 cup oil
1/2 cup melted butter
2 teaspoons vanilla
2 cups grated zucchini
1 cup walnuts
Heat the oven to 325 degrees. Butter 2 bread pans. I like to also line the bottoms with parchment. Set aside. Whisk together the dry ingredients in a large bowl. Whisk together the wet ingredients in a measuring pitcher and add them to the dry ingredients. Mix together using a wooden spoon. When they are mostly combined add the zucchini and mix a little. Let the mixture
sit while you chop the nuts. This helps some of the moisture come out of the zucchini and it will get easier to stir. Add the nuts and combine. Divide evenly between the loaf pans and bake for 45-50 minutes. Let them cool a little before removing them and allowing them to cool on a cooling rack. Serve with softened butter and enjoy!
