Zuppa Toscana


Ingredients:


1 pound Italian sausage

1 1/2 cups chopped potatoes

1 diced shallot

1 quart chicken broth

2 cup water

5 large chopped kale leaves, large ribs removed

1/2 cup heavy cream

salt and pepper to taste

olive oil

Parmesan cheese and fresh basil for garnish

*add a cup or two of other veggies if desired: green beans, zucchini and carrots work well.


Method:


Heat 1 tablespoon of oil in a large pot of medium high heat. Add the sausage and cook until browned and cooked through. Add shallots and potatoes and a pinch of salt and pepper and saute for several minutes. Add chicken broth and water (and green beans or other vegetables now if adding, not the kale). Simmer for 20 minutes, or until vegetables are all tender. Add the kale and simmer another two minutes. Add the cream and check for seasoning. Serve soup with Parmesan cheese, fresh basil and bread.
